OUR RECIPE

Ingredients

  • 400 g (14.1 oz) 00 flour
  • 355 g (12.1 oz) egg yolks
  • 1 tbsp salt

Instructions

  1. On a clean surface, make a well with the flour. Add the egg yolks and salt in the center.
  2. Using a fork, beat the yolks and slowly incorporate the flour until the dough firms up.
  3. Knead until compact and let rest wrapped in plastic for 10 minutes.
  4. Knead again until smooth and let rest wrapped in plastic for at least 30 minutes before using.
